| THE HISTORY OF VALENTINE'S DAY |
So what is the story behind Valentine's Day?Some say the day is named after a bishop named Valentine, who was stationed in the Roman Empire. Claudius II was the Emperor at that time. He thought that unmarried men made better soldiers, so he decided to make it a law that young men could not marry. Around 270 A.D., Valentine took pity on the ostracized soldiers who were not permitted to marry or see their sweethearts. He became an advocate of these young lovers and began to perform secret marriages. He was soon found out and jailed. Emperor Claudius II attempted to convert Valentine to begin worshipping the Roman gods, but Valentine refused. Instead, he tried to convert Claudius to Christianity and Valentine was sentenced to be executed on February 14, 270. Another version of the history of Valentines Day tells that Valentine fell in love with his jailer's daughter. Just before his death, he sent her a note and signed it "from your Valentine." An aura of romance surrounded his demise and those who knew about it spread the tale. Bishop Valentine became Saint Valentine with his fame extending to England and France. After his death, Valentine then became what is known as a "Patron Saint." Some considered him the spiritual overseer of an annual festival in which young Romans would distribute cards of affection to those they wished to formally see. This festival was held each February 14. There are Valentine cards in museums worldwide that date back to 1415. February has been the month to celebrate love ever since the Middle Ages. |

Nothing says celebration like champagne, but what exactly is it? Strictly speaking, champagne is a sparkling wine that comes from the Champagne region of northeastern France. If it's a bubbly wine from another region, it's sparkling wine, not champagne. While many people use the term "champagne" generically for any sparkling wine, the French have maintained their legal right to call their wines champagne for over a century. The Treaty of Madrid, signed in 1891 established this rule, and the Treaty of Versailles reaffirmed it. Sparkling wines can be made in a variety of ways, but traditional champagne comes to life by a process called the methode Champenoise. Champagne starts its life like any normal wine. The grapes are harvested, pressed, and allowed to undergo a primary fermentation. The acidic results of this process are then blended and bottled with a bit of yeast and sugar so it can undergo a secondary fermentation in the bottle which gives champagne its bubbles. This new yeast starts doing its work on the sugar, and then dies and becomes what's known as lees. The bottles are then stored horizontally so the wine can "age on lees" for 15 months or more. After this aging, wine makers turn the bottles upside down so the lees can settle to the bottom. Once the dead yeast has settled, producers open the bottles to remove the yeast, add a bit of sugar known as dosage to determine the sweetness of the champagne, and slip a cork onto the bottle. You can find highly regarded sparkling wines from California, Spain, Italy, Australia, and other areas without shelling out big bucks for Dom Perignon. Although it's not technically considered champagne, we recommend trying a Prosecco from Italy. It varies from champagne in taste, grape, and region, but hey, if it looks like champagne and drinks like champagne, it doesn't really matter what you call it!
